With the spooky season rapidly approaching, why not make autumn’s favourite comfort drink – the Pumpkin Spice Latte.
So, how do you tame that PSL craving without breaking the bank and going any further into your overdraft? Here are two fool-proof ways to get your PSL fix. I love coffee, so I made my Pumpkin Spice Lattes with more coffee than milk, but obviously, you can change up the coffee-milk ratio to your liking.
Recipe 1 – The Syrup Recipe
This recipe is the syrup recipe, as in “I only have a few minutes to make a coffee before I’m late to my 10 am” PSL recipe. The best thing about using syrup is that it gives an instant flavour boost to your coffee, and you can also easily adapt the recipe to make a Frappuccino!

Ingredients
• 3 pumps (approx. 30ml) Pumpkin Spice
• 200ml brewed coffee. If you’re lucky enough that your flatmate lets you borrow their expresso machine, make two shots of espresso.
• 100ml milk – I used semi-skimmed because that’s what I had in the fridge
• Whipped cream (optional)
• Pumpkin pie spice or cinnamon, to garnish (optional)
Method
1) Boil water in a kettle and brew your coffee as normal
2) While the coffee is brewing, measure the milk (100ml) and syrup (30ml) into a microwavable mug and heat until hot, but take care not to boil it.
3) Once the coffee has brewed, add the milk to the coffee, stir, and top with whipped cream
Recipe 2 – The Frappuccino
Ingredients
• 2 tablespoons / 3 pumps / 30mls pumpkin spice syrup
• Coffee (optional) – take the amount of coffee you use (ml) from the 300ml milk, to keep the liquid-ice ratio the same
• 300ml milk – I used semi-skimmed because that’s what I had in the fridge
• Blender – if you don’t have one, ‘borrow’ your flatmate’s, or buy one off of Amazon as they always have deals! I bought a small Breville one for £15
• Approx half a mug of ice (add the ice little by little until you get that Frappuccino consistency)
• Whipped cream (optional)
Method
1) Brew coffee if using
2) Pour coffee and milk into a blender
3) Add pumpkin spice syrup, approx 2 tablespoons / 30ml
4) Add a small portion of ice, blend and repeat until you get that Frappuccino consistency
Recipe 3 – The Healthier (Group) PSL
This healthier, DIY Pumpkin Spice Latte recipe is perfect if you have a bit more time on your hands, or if you’re making pumpkin spice lattes for a group of people!
Ingredients (serves 1)
• 100ml milk (I used semi-skimmed)
• 200ml brewed coffee
• 2 tablespoons pumpkin puree (I managed to find a tin for about £2 in Booths)
• 1 tablespoon light brown sugar (I used demerara), to taste
• 1 teaspoon vanilla extract
• 1 teaspoon pumpkin pie spice, plus a pinch extra to garnish (I bought mine for £1.50 from Amazon because it would have cost more to buy all the spices separately to make my own!)
• Whipped cream (optional)
Method
1) Add milk to a pan and heat on the hob (make sure that it doesn’t boil!)
2) Brew your coffee as normal
3) Add the pumpkin puree, sugar, vanilla and pumpkin pie spice to the milk, stir until mixed
4) Pour the milk mixture into the coffee, top with whipped cream and garnish with the pumpkin pie spice
